For a fast and easy meal, consider preparing the dish right up to the baking point, covering it tightly, and refrigerating it overnight. That way in the morning all you have to do is slip it in the oven to bake while you get ready for the day.

 

What You Will Need

  • 1/2 of a medium onion
  • 5 eggs
  • 4 cloves of garlic (medium sized)
  • 1/4 of a pound of ground turkey or ground lamb
  • 3 tablespoons of chicken broth, separated
  • 3 cups of kale
  • Salt
  • Fresh ground black pepper
  • A sharp knife
  • A cutting board
  • A stainless steel skillet (9 to 10 inches)
  • A small bowl
  • An egg beater
  • A spatula

 

What to Do

  • Mince the onion and set aside using the sharp knife
  • Chop the garlic and set aside using the sharp knife
  • Allow both the garlic and onion to sit for a few minutes before cooking
  • Preheat the broiler on low
  • Add 1 tablespoon of the broth to the skillet
  • Place the skillet on medium high heat
  • When hot, add the onion and reduce the temperature to medium
  • Sauté the onion, stirring often, for about 3 minutes
  • When the onion is fragrant, add the garlic
  • Stir and allow to cook for 1 minute
  • Add the ground turkey or lamb
  • Continue to cook, while breaking up clumps with the spatula, for 3 minutes
  • Add 2 tablespoons of broth
  • Chop the kale and toss the stems
  • Add the kale to the skillet
  • Reduce the heat to low
  • Cover and continue to cook
  • Cook for 5 minutes
  • Add salt and pepper to the skillet and mix
  • In the small bowl, beat the eggs together
  • Season the eggs with a pinch of both the salt and pepper
  • Uncover the skillet and pour the eggs on top of the mix evenly as possible
  • Do not stir, but allow to cook for 2 minutes
  • Remove the skillet from the heat and place in the oven
  • Make sure the skillet is about 7 inches from the broiler and directly in the middle
  • Allow to broil for 2 to 3 minutes, or until the eggs are firm and the top has not yet burned
  • Remove from the oven and allow to cool momentarily
  • Plate and serve hot
